Custom products fields

Is it possible to create custom fields for products, without setting the allowed value (the buyer will write them), for example: arrival ad departure date in a booking system?

You can add textboxes for input from the buyer and then have some validation to check for a date,  In theory a popup date calendar with jQuery which populates the option textbox should be possible, but I've never tried this.

Here's a list of the tokens you need to look at for the templating.

[TAG:OPTIONTEXT1:{properties xml}]
additional [TAG:OPTIONTEXT<Number>:{properties xml}] can be added as yout wish. The number will match the sort order of options
[TAG:OPTIONVALRANGE:{properties xml}] - Range validator for options
[TAG:OPTIONVALREGX:{properties xml}] - Regular Expression validator for options
[TAG:OPTIONVALREQ:{properties xml}] - validator for options
[TAG:OPTIONVALSUMMARY:{properties xml}] - validator for options

No Sorry, you'd have to make the product itself a part payment. and then perhaps use a custom field to display the full price.
